One of the major differences in this Combitherm electric, countertop CombiOven is the catalytic converter for cleaning the airstream of odors and grease-laden by-products. Another is that it’s a compact unit, saving space in your already crowded kitchen. The 18 gauge stainless steel exterior surrounds a 20 gauge stainless steel interior and comes supplied with 2 stainless wire shelves which can hold 8 half size sheet pans or 4 full size hotel pans. There’s also a built in drip tray for removal of grease and crumbs. Multiple shelf timers allow you to keep track of cooking several different foods at once in the same oven. This is a boiler-free product, which means the maintenance, cost and downtime boilers create have been removed as well. There’s a two-speed fan which provides improved baking results, such as browning and crisping. The oven rests on adjustable bullet legs.
The cooking functions of this oven are steam, convection and combination. The temperature range for the oven as a whole is 85-485F. The convection mode covers the spectrum of the temperature range, while steamed cooking maximizes at 250F. The lowest temperature setting for the combination mode is 212F. This unit features the Express Control, which adds several additional functions, such as Gold-N-Brown, which offers 6 different levels of browning, and Retherm for re-heating foods. A delayed start time and reduced energy levels are also operated by the Express Control. It allows for the storage of up to 250 recipes with up to 20 steps each. The language for your software operation comes in a choice of English, French, Spanish, German, Russian, Korean and Mandarin Chinese.
