The Wood Stone Gas Plancha offers a high-performance solution for chefs seeking the power and caramelization of a gas charbroiler on a direct contact cooking surface. Engineered with precision, the Gas Plancha features four thermostatically controlled and individually adjustable zones, ensuring precise heat delivery for a range of cooking temperatures simultaneously.
The 3/4-inch thick smooth steel cooking surface is heated by four 27,500 BTU/hr burners (NG), providing rapid and uniform heat distribution across the entire cook surface. Our proprietary control system, developed by Wood Stone, guarantees uniform and consistent temperature control, with instantaneous heat recovery even under the most demanding loads.
With a temperature range from 150°F to 650°F, the Gas Plancha can be used as both a griddle and a direct contact cooking surface, making it suitable for searing or sautéing a wide variety of ingredients. Achieve the color and flavor profile of a chargrill with ease.
Compact and efficient, the Gas Plancha features a small footprint measuring 48 inches x 36 inches, with a 48-inch x 24-inch cooking surface. Supported by four legs, it’s designed for easy installation on a suitable countertop or optional stand with front locking casters, available from Wood Stone.
Proper ventilation is essential, and the Gas Plancha must be vented with a Listed Type 1 exhaust hood or equivalent, constructed in accordance with NFPA 96 and all relevant local and national codes.
