Intelligence and efficiency were the goals for this electric countertop Combitherm CombiOven and they were easily met. It’s 18 gauge stainless steel exterior and 20 gauge stainless steel interior provide the framework for an energy efficient “smart” oven. The venting system for this space-saver is self-contained, and which boasts of a powerful fan which draws steam and into the hood intake and captures the grease as the air passes through the filter system. The oven venting system includes one grease filter and one charcoal filter which can be easily accessed from the left side of the oven. The hood has its own power switch as well. It prevents the need for a more costly oven hood. Two stainless wire shelves create the space for 8 half size sheet pans or 4 full size hotel pans. The door has a positive action casual catch handle and a removable door gasket. There’s a built-in drip tray with this model. The boiler-free flash steam feature eliminates a great deal of maintenance, chemical and labor costs, and down time. It’s perched on adjustable bullet legs.
The cooking modes offered are steam convection and combination. The overall temperature range of the oven is 85-485F, with convection being the mode which spans the entire temperature range. The temperature range for steam is 85-250F, and the combination range is 212-485F. The ExpressTouch control offers 6 levels of browning, and a retherm mode. It operates a two speed fan which helps with browning and lowering electricity venting, delayed start, and shelf timers are also managed with the ExpressTouch.
